This recipe will take about 15 minutes to prepare and just over an hour to cook.

4 cups White sugar
1 1/4 cups cornstarch
1 teaspoon cream of tartar
4 1/4 cups water
1 tablespoon lemon juice
1 1/2 tablespoons rosewater
1 cup Icing sugar
Vegetable oil

Directions:
You will need an adults help with steps 2 -5 because they involve using a hot stove.

Step 1: In a 9 inch baking pan, grease the sides and bottom with vegetable oil. Line with wax paper and grease the wax paper.

Step 2: In a saucepan, combine lemon juice, sugar and 1 1/2 cups water on medium heat. Stir constantly until sugar dissolves. Allow mixture to boil. Reduce heat to low and allow to simmer, until the mixture reaches 240 degrees on a candy thermometer. Remove from heat and set aside.

Step 3: Combine cream of tartar, 1 cup corn starch and remaining water in saucepan over medium heat. Stir until all lumps are gone and the mixture begins to boil. Stop stirring when the mixture has a glue like consistency.

Step 4: Stir in the lemon juice, water and sugar mixture. Stir constantly for about 5 minutes. Reduce heat to low, Allow to simmer for 1 hour, stirring frequently.

Step 5: Once the mixture has become a golden colour, stir in rosewater. Pour mixture into wax paper lined pan. Spread evenly and allow to cool overnight.

Step 6: Once it has cooled overnight, sift together Icing sugar and remaining cornstarch.

Step 7: Turn over baking pan containing Turkish delight onto clean counter or table and cut with oiled knife into one inch pieces.

Step 8: Coat with Icing sugar mixture. Serve or store in airtight container in layers separated with wax or parchment paper.

Turkish Delight Recipe
Ingredients:

* 8 cups of sugar
* 8 cups of water
* 1 ½ cups of corn starch
* 3 Tablespoons of Lemon Juice
* 3 or 4 Drops of Bergamot oil (about 1/8 cup of Rose Water or Orange Water could be substituted for a slightly different flavor)
* Pistachio Nuts (optional – but they add so much to the end result)
* Powdered Sugar for dusting the final product

Preparation:

1. Heat the water (but do not boil)
2. Mix the cornstarch and sugar together well and add to the heated water, it over LOW heat, until it dissolves.
3. Continue to cook over a low fire until the mixture thickens (to about the consistency of pudding).
4. Lower the heat even further and continue to cook, stirring constantly for about one hour.
5. Ten minutes before the hour is up, add the lemon juice and bergamot oil (or Rose or Orange water).
6. Remove from the heat and stir in the pistachio nuts.
7. Pour into a shallow pan (that has been sprayed with cooking spray).
8. Cut into small squares (no more than ½ to 1 inch square, as the candy is very sweet and rich).
9. Place the powdered sugar into a shallow bowl or plate and coat each square with sugar before serving.


(from a Turkish website---as you can see the nuts are optional and tastes better with them, but if you can't add them, then so be it). You have to cut these very small, so that's "appetizer size".
